Amazing Apple Pie!

The most amazingly delicious pie I've ever tasted...and I made it myself!

And here's how.

First off, buy organic or at least local! It's fall, and that means APPLES!
Organic dairy and produce really do taste better, and it makes a difference in the taste-quality of the food you cook.  This is the official label:

You MUST begin with the crust. (MAKE 2!)
You need:
 - 1 1/4 cups all-purpose flour
 - 1/4 tsp. Salt
 - 1/2 cup Unsalted Butter, chilled and diced
 - 1/4 cup Ice Water

In a large bowl, combine the flour and salt.  Cut in butter until mixture resembles coarse crumbs.
Stir in water, a tablespoon at a time, until mixture forms a ball.  Wrap in plastic and refrigerate for 4 hours or overnight.  (or you can put it in the freezer til your finished with everything else...not quite the same consistency though).  Remember to make 2 of these!(unless you want an open-faced pie).

 Now for the filling!
     
 You need:
 - 1 pastry pie crust. (done!)
 - 1 egg (optional)
 - 1/2 cup unsalted butter
 - 3 Tablespoons all-purpose flour
 - 1/4 cup water
 - 1 Tablespoon cinnamon
 - 1 tsp. cloves
 - 1 tsp. nutmeg
 - 1/2-3/4 cup white sugar*
 - 1/2-3/4 cup brown sugar*
 - 8 Granny Smith apples-peeled, cored and sliced.
(use a variety of apples, makes for a more diverse and unique taste.)
            *You can use more or less to your taste...I always opt for more.

And now to make the filling:
     1.  Preheat oven to 350.  Melt the butter in a saucepan.
Stir in flour to form a paste.  Add water, white sugar, brown sugar, cinnamon, nutmeg, and cloves, and bring to a boil.  Reduce temperature and let simmer.  Your paste will be brown and thick. (Be careful not to burn your sugar...it makes an awful mess).
     2.  Fold 2/3 of your syrup paste into the apples while still hot.
     3.  Take crust and roll out on floured surface 2" larger around than your pie pan. Place inside and brush with some egg white to keep from getting soggy.
     4.  Fill the crust with apples, mounded slightly.
     5.  Roll out second crust and slice into long strips. Weave over top of pie to create the lattice effect.
     6.  Pour remaining syrup paste over top of pie all over. 
     7.  Brush top of crust with milk and the remaining egg.
     8.  Bake 45-65 minutes until apples are soft.

Cool. And then serve. That way it won't fall apart!

Could have something to do with the 3 sticks of butter! MMMmmmmmm so delicious!

  1. Homemade pies are the best! And you are so right about organic ingredients tasting so much better! Quality of ingredients is definitely important when cooking.
